Menu Plan Monday (uh, Tuesday)

Menu Plan Monday (uh, Tuesday)

I don’t know what happened with me yesterday . . . I forgot to post my menu for the week after I planned it out. My weekly shopping took 20 minutes since I have most of what I need.

But I did pick up some things that are not entirely healthy for me. I found a really great recipe for a gluten-free cookie and turned them into snicker doodles; I want to make another batch so I needed some (gasp) sugar!

The very first thing I ever baked was snicker doodles. I was in elementary school and bought a kids cookbook at one of the Scholastic book fairs. I’ve been baking ever since!

This time, I plan to modify the gf-recipe just a bit. Then I want to put some ice cream between two cookies and freeze it!

Yummy right! I very rarely eat ice cream. And when I do, I eat maybe a half a cup from the whole carton and never touch the stuff again for 6 months!

I’ll try my best to snap some pictures but I can’t make any promises! I’m predicting an unannounced visit from the Cookie Monster! And you know how fast he consumes cookies!
